Stamey’s Barbecue
One of the earliest Lexington-style rooms still serving hardwood-cooked pork shoulder with house dip and red slaw. The Gate City Boulevard location is a steady Triad stop with drive-thru convenience when you are passing through.

Clyde Cooper’s BBQ
A Raleigh institution for Eastern-style chopped pork, fried chicken, and classic sides. The Millbrook Road room keeps the counter-service pace that made Cooper’s a downtown fixture for decades before the move.

Parker’s Barbecue
A Highway 301 landmark for eastern Carolina barbecue and fried chicken. The room still runs on cash or check, with an ATM on site, and keeps long daily hours that make it an easy I-95 pause.

Red Bridges Barbecue Lodge
A western North Carolina lodge for hickory-smoked pork, red slaw, and house sauce. It sits far from the Triangle, so pair it with other foothills stops rather than forcing it onto an eastern day.
Field note: Closed Monday and Tuesday. Sunday hours are shorter than the midweek service window.

Skylight Inn
The Jones family whole-hog benchmark: finely chopped pork with crackling, vinegar pepper, and a dense slab of cornbread. It is the clearest eastern reference point on this list and pairs well with a broader Pitt County day.
